A savory, egg-based casserole combining tender zucchini and onion with melted cheese and Bisquick for a golden, satisfying dish.

Ingredients

  • 3 lbs zucchini, chopped fine

  • 6 eggs

  • 1 cup oil

  • 1 tsp salt

  • 1 cup grated cheese

  • 2 cups Bisquick

  • 1 onion, chopped

Directions

  • Preheat oven to 350°F. Grease a 13x9-inch baking pan.

  • In a large bowl, beat the eggs.

  • Add oil, salt, grated cheese, and Bisquick to the eggs. Mix until well combined.

  • Fold in the finely chopped zucchini and chopped onion.

  • Pour mixture into the prepared greased pan.

  • Bake uncovered for 1 hour and 10 minutes, or until lightly browned on top.
