Ingredients
3 lbs zucchini, chopped fine
6 eggs
1 cup oil
1 tsp salt
1 cup grated cheese
2 cups Bisquick
1 onion, chopped
Directions
Preheat oven to 350°F. Grease a 13x9-inch baking pan.
In a large bowl, beat the eggs.
Add oil, salt, grated cheese, and Bisquick to the eggs. Mix until well combined.
Fold in the finely chopped zucchini and chopped onion.
Pour mixture into the prepared greased pan.
Bake uncovered for 1 hour and 10 minutes, or until lightly browned on top.
